Ingredients for 10 servings: | |
2 cups crumbled cornflakes | |
2 cups crumbled Lotus Biscoff biscuits (or oat biscuits) | |
2 tsp cinnamon | |
4 eggs, beat until frothy | |
Oil for frying | |
500 ml cup Baileys Ice Cream | |
For the topping: | |
Chocolate ganache (dark chocolate coating with cream) or chocolate sauce | |

For the deep-fried Baileys Ice Cream, mix the cinnamon, crumbled biscuits and cornflakes in a bowl.
Place one scoop of ice cream on the mixture and coat generously. Put the scoop of ice cream in the freezer for 1 to 2 hours.
Then roll the frozen balls in the frothy eggs and afterwards again in the biscuit mixture and freeze for another hour or overnight.
Heat the oil in a pot or deep-fryer to 180 °C and deep-fry the balls individually for 10-15 seconds until golden brown.
Serve the fried ice cream directly with ganache and fruit and enjoy!
